Jika kulit arinya sudah robek berwarna ungu tua dan badan cumi lembek berarti cumi sudah kurang segar.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Cumi yang direndam larutan formalin, biasanya terasa kaku, cenderung keras badannya, tidak ada aroma anyir dan sungut di bagian kepalanya kaku atau keras. Saat dimasak tidak pernah empuk (tetap alot).&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Untuk itu, sepulang berbelanja, bersihkan segera cumi agar tidak cepat busuk. Buang kantong tinta di bagian bawah kepala, kupas kulit arinya jika perlu dan buang tulang rawannya yang lunak. Bersihkan lendir dan kotoran di bagian dalam badannya di bawah air mengalir. Tiriskan lalu olah segera atau simpan dalam freezer.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Untuk mengurangi aroma anyir, lumuri cumi dengan air jeruk nipis atau sedikit larutan soda kue dan diamkan beberapa saat. Cumi yang benar-benar segar tidak akan menebarkan aroma anyir berlebihan.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Saat memasak, jika dengan bumbu halus sebaiknya jangan menambahkan air karena saat terkena panas, badan cumi akan menyusut dan mengeluarkan banyak air.
